SAUCES

 

EXPLORER TARTAR SAUCE

We use a lot of this Sauce on board the yacht Explorer in Alaska each season. This is the basic recipe which I frequently vary and experiment with.

Mayonnaise 2 Cups
Dill Relish 1/3 cup
Onion minced, 1/3 cup
Fresh Dill Weed 1 tablespoon minced
Capers 2 tablespoons minced
Celery Seed 1/4 teaspoon
Salt to taste
Pepper to taste
Anchovy Paste 1/2 teaspoon
Lemon Juice 2 tablespoons

Combine all ingredients and chill.
