EXPLORER'S PICO DE GALLO

Even I can't believe how much of this stuff we go through each season. It seems like I'm always making it.

INGREDIENTS:

Yellow Onion 1 Cup - fine diced
Red Pepper 1 1/2 Cup - fine diced
Green Pepper 1 1/2 Cup - fine diced
Tomato, fresh 1 Cup - fine diced
Fresh Garlic 2 Tablespoons - minced
Jalapeno Pepper 1/2 Cup - minced (or to taste)
Cumin, ground 1 1/2 Teaspoon
Dark Chile Powder 1 Teaspoon
Cilantro, fresh 1/2 Cup - minced
Lemon Juice Juice of one large lemon
Salt to taste
Canned Stew Tomatoes 1 can with juice

DIRECTIONS:

Combine all the ingredients and refrigerate for two hours before serving with warm tortilla chips.
