SOUP

 

PAPAYA PINEAPPLE BISQUE

 

A most refreshing chilled soup. This doesn't hold very well so make it about two hours before serving.

Fresh Pineapple cut in 1 inch chunks, 4 cups
Fresh Papaya cut in 1 inch chunks, 4 cups
Dark Rum 1 tablespoon
Plain Yogurt 2 cups
Milk 3/4 cup
Sugar to taste
Fresh Nutmeg grated, 1 teaspoon
Ground Cinnamon 1/2 teaspoon
Lime Juice juice of 1 lime

Puree pineapple, papaya, rum and milk in blender. Strain through a medium strainer. Discard pulp, add yogurt, nutmeg, sugar,cinnamon and lime juice, blend thoroughly. Chill and serve.
