THE LAST APPRENTICE
SOUP
PAPAYA PINEAPPLE BISQUE
A most refreshing chilled soup. This doesn't hold very well so make it about two hours before serving.
| Fresh Pineapple |
cut in 1 inch chunks, 4 cups |
| Fresh Papaya |
cut in 1 inch chunks, 4 cups |
| Dark Rum |
1 tablespoon |
| Plain Yogurt |
2 cups |
| Milk |
3/4 cup |
| Sugar |
to taste |
| Fresh Nutmeg |
grated, 1 teaspoon |
| Ground Cinnamon |
1/2 teaspoon |
| Lime Juice |
juice of 1 lime |
Puree pineapple, papaya, rum and milk in blender. Strain through a medium strainer. Discard pulp, add yogurt, nutmeg, sugar,cinnamon and lime juice, blend thoroughly. Chill and serve.
