COCONUT MANGO OATMEAL BARS

This is a favorite with the fishermen in their lunch box.

INGREDIENTS:

Flour, all purpose 1 Cup
Brown Sugar 2/3 Cup
Quick Oatmeal 1 Cup
Baking Soda 1 Teaspoon
Salt Pinch
Butter 1/2 Cup
FILLING  
Papaya 2 Cup diced
Sugar 1/2 Cup
Flour 2 Tablespoons
Coconut, shredded 1/2 Cup

DIRECTIONS:

Combine dry ingredients. Cut in butter. Spread mixure on bottom of ungreased 9X9X2 Pyrex baking pan. Reserve 1/2 mixture for topping.

In a separate bowl combine filling ingredients. Spread filling evenly on top of mixture in baking pan. Top with reserved topping. Bake at 350 degrees for 30-35 minutes.

Cool on rack - cut into bars.
