I created this dish for our Belize Ambassador Carolyn Curiel and a dinner held at the Embassy in Belize City 1998.
INGREDIENTS:
| Low Fat Ricotta Cheese | 1 1/2 Cup |
| Non Fat Sour Cream | 1/2 Cup |
| Rum Extract | 1/4 Teaspoon |
| Almond Extract | 1/4 Teaspoon |
| Vanilla Extract | 1/2 Teaspoon |
| Whole Frozen Strawberries | 1 lb. |
| Orange Juice | 1/2 Cup |
DIRECTIONS:
Puree all ingredients in a blender until smooth. Follow directions on your ice cream maker or place in a shallow glass baking dish, place in freezer and stir occasionally until frozen. Serve with fresh strawberries.
