AMBASSADOR'S AMBROSIA - Low fat Strawberry Ice Cream

I created this dish for our Belize Ambassador Carolyn Curiel and a dinner held at the Embassy in Belize City 1998.

INGREDIENTS:

Low Fat Ricotta Cheese 1 1/2 Cup
Non Fat Sour Cream 1/2 Cup
Rum Extract 1/4 Teaspoon
Almond Extract 1/4 Teaspoon
Vanilla Extract 1/2 Teaspoon
Whole Frozen Strawberries 1 lb.
Orange Juice 1/2 Cup

DIRECTIONS:

Puree all ingredients in a blender until smooth. Follow directions on your ice cream maker or place in a shallow glass baking dish, place in freezer and stir occasionally until frozen. Serve with fresh strawberries.
