FRIED GREEN TOMATOES


One of my all-time favorite vegetables.Try them with a spicy Black Bean Salsa.

Fresh Green Tomatoes sliced, 4 each
Buttermilk 1/2 cup
Lime Juice juice of 1/2 fresh lime

Combine buttermilk with lime juice, add tomatoes and marinate at least 1/2 hour.

BREADING:

Bread Crumbs, fine 1 1/2 cups
Oregano, dried 1 tablespoon
Black Pepper 1/2 teaspoon
Salt 1 teaspoon
Granulated Garlic 1 tablespoon
Sweet Basil, dried 1 tablespoon
Thyme, dried 1 teaspoon
Olive Oil to cook

Combine spices with bread crumbs and dredge marinated tomato slices. Fry quickly in hot oil until golden brown. Serve immediately.
