SALADS

 

CUCUMBERS WITH PINEAPPLE COCONUT CHUTNEY

Fresh Cucumbers washed, scored lengthwise and sliced in rounds, 2 each
Salt pinch
Lime Juice juice of 1 lime
Coconut Pineapple Chutney* 1 cup


Sprinkle sliced cucumbers with salt and lime then add Chutney and refrigerate for 1 hour before serving.
