COCONUT RUM VINAIGRETTE

I created this recipe in a rare moment of culinary genius. It is truly outstanding. Try in on a Chayote/Carrot Salad.

Cream of Coconut Milk 3/4 cup
Balsamic Vinegar 1/2 cup
Sherry Wine 1/4 cup
Olive Oil 1/4 cup
Dark rum 1/4 cup

Combine all ingredients except oil in blender and mix well. Slowly add oil while blending. Chill until ready to use.
