CREAM OF COCONUT REDUCTION

I make this up ahead and use it in a variety of dishes.

Heavy Cream 1 pint
Cream of Coconut Milk 1 can

Combine ingredients and simmer gently until reduced by 1/2. Refrigerate until needed.
