BAKING
DUTCH OVEN FRUIT COBBLER
This is quick and easy to make and a good recipe for beginners. Of course, like all Dutch Oven recipes you can make this in your own oven.
INGREDIENTS:
TOPPING:
| Flour, all purpose |
3 Cups |
| Baking Powder |
3 Teaspoons |
| Sugar |
3/4 Cup |
| Cinamon |
1 1/2 Teaspoon |
| Butter |
9 Tablespoons |
| Eggs |
3 Eggs |
| Milk |
9 Tablespoons |
FRUIT FILLING:
| Canned Peaches (or other fruit combinations -Mango/Peach is great) |
3 Cans w/liquid |
| Sugar |
1 Cup |
| Vanilla |
1 Tablespoon |
| Rum or Almond Extract |
1 Teaspoon |
| Corn Starch |
3 Tablespoons |
DIRECTIONS:
Pre-heat Dutch Oven Top. In Dutch Oven bottom combine Peaches, their liquid, and sugar. Bring to a boil and add the cornstarch that has been disolved in a little water. Stir and thicken. Add Vanilla and Rum or Almond Extract, stir and keep hot while you make the topping.
Combine the dry topping ingredients and cut in butter. Combine eggs and milk and add all at once into dry mixture. Drop large spoonfuls of Topping on HOT fruit mixture in Dutch Oven.
Place HOT top on Dutch Oven and set oven on 5 coals and top with 14 coals. Bake for 20-30 minutes till topping is golden. Serve with cream.
