PINEAPPLE COCONUT GINGER CHUTNEY


This is an outstanding marinade for chilled Cucumbers or Jicama.

Fresh Pineapple finely diced, 1 cup
Fresh Ginger grated, 2 tablespoons
Cream of Coconut Reduction* 6 tablespoons
Grated Coconut 4 tablespoons

Combine all ingredients and mix well. Set aside until ready to use.

*Cream of Coconut Reduction
