SOUP

 

CHILLED BREADFRUIT SOUP

An unusal and tasty chilled soup for a hot day.

Onion medium diced, 1 each
Garlic minced, 2 tablespoon
Breadfruit 1 medium sized - peeled, cored and course chopped
Fresh Chicken Stock 1 quart
Fresh Nutmeg grated, 1 teaspoon
Black Pepper 1/2 teaspoon
Salt to taste
Heavy Cream 1/2 cup
Butter 4 tablespoons
Half & Half 3 cups

Sautee' onion and garlic in butter for five minutes in a heavy stock pot.Add chicken stock and bring to a boil. Add breadfruit and cook until tender, about 20-30 minutes. Puree in blender, return to pot and add cream, 1/2 & 1/2, salt & pepper. Chill about three hours until ready to serve. Sprinkle with fresh grated nutmeg.
