SALADS
CHAYOTE SALAD
Chayote is a Mexican Squash like vegetable that you can usually find in the "cute produce" section of your supermarket. I frequently serve it with Mexican food. It is also great just sliced, sauteed in butter and served hot.
INGREDIENTS:
| Chayote |
4 each, seed removed, medium diced |
| Carrots |
4 each, peeled, julienned |
| Avocado, ripe |
2 each, diced |
| DRESSING: |

| Lemon Juice |
1 Teaspoon |
| White Wine Worestershire Sauce |
1 Tablespoon |
| Cumin, ground |
1 Teaspoon |
| Hot Sauce - your favorite brand |
1/2 Teaspoon or to taste |
| Salt |
to taste |
| Pepper |
to taste |
| Cilantro, fresh |
2 Tablespoons, minced |
| Olive Oil |
1/3 Cup |
DIRECTIONS:
In a sauce pot separately blanch the Chayote and Carrots until al dente. Drain and cool. Dice Avocado and lightly sprinkle with lemon juice.
Assemble Dressing. Place julienne carrots on salad plate, top with mounded Chayote, garnish with diced Avocado, chill. Serve with Dressing.
